Go with St. Louis spring break '07. People that live more than a day away are willing to go to St. Louis.
Even though Topeka's race track got alot of work done on it last summer.

Another option to consider for this would be at The Tire Rack in South Bend, IN. I know they have done events for car clubs in the past. I was staying in Elkhart once and there were about 50 3000 GTs there for a meet at the Tire Rack. I know they have an autocross course and maybe a small roadcourse there.
