Assembling the engine is a small task, its all the machine work that takes time.

A good machine shop will return the block in a couple days same for a head (Valve job)

Depending on your wallet and taste this can go way up....

My engine builder had my motor for a week, (Jeep engine)
that included the block work and a very good valve job, B&B the rotating assembly treardown and re-assemble, parts aquisition.

The parts you describe require a top and bottom end rebuild.

If you plan on doing this yourself, what is your level of expertise?
If you plan on having a shop do it, why don't you ask them?

The rule of thumb is that with any rebuild work, it's going to take longer than you expect.
